Ingredients:
- 4 medium potatoes
- 4 cloves garlic, minced
- 1/2 cup sour cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
Preheat oven to 400F 200C
Wash and dry potatoes, then pierce each several times with a fork
In a small bowl, mix together minced garlic, sour cream, and butter
Place each potato on a piece of aluminum foil, drizzle with olive oil, and season with salt and pepper
Wrap each potato tightly in foil and place on a baking sheet
Bake in preheated oven for 45-60 minutes, or until potatoes are tender when pierced with a fork
Carefully unwrap potatoes and make a lengthwise slit in the top of each
Divide the creamy garlic topping evenly among the potatoes, spreading it inside the slits
Garnish with chopped parsley and serve hot
