Ingredients:
- 300g pasta of your choice
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 250g mushrooms, finely chopped
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 can 400g crushed tomatoes
- 1/2 cup vegetable broth
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese optional, for serving
Instructions:
Follow the directions on the package to cook the pasta until it is al dente
Remove the water and set it aside
Put olive oil in a black skillet and heat it over medium-low heat
Put in the garlic and onions, and cook them until they get soft
Put in the celery, carrots, and mushrooms
Cook until the mushrooms have given up their water and the vegetables are soft
Vegetable broth, oregano, thyme, salt, and pepper should all be added now
Simmer for 10 to 15 minutes, stirring every now and then
Mix the mushroom bolognese sauce well with the cooked pasta by tossing them together
If you want, you can serve it hot with grated Parmesan cheese and fresh parsley on top
