Ingredients:
- 1 lb flank steak
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Lime wedges, for serving
Instructions:
Preheat grill or grill pan to medium-high heat
In a small bowl, mix together olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper
Rub the spice mixture all over the flank steak
Grill the flank steak for 4-5 minutes per side for medium-rare, or until desired doneness
Remove steak from grill and let rest for 5 minutes before slicing thinly against the grain
Meanwhile, warm the corn tortillas on the grill for about 30 seconds per side
To assemble tacos, place sliced steak on warmed tortillas and top with shredded lettuce, diced tomatoes, diced onion, chopped cilantro, and avocado slices
Serve with lime wedges for squeezing over the tacos
