A vibrant and flavorful salad featuring grilled Southwestern-spiced chicken, ripe mango, creamy avocado, and crunchy pepitas, all tossed together with mixed greens and a zesty lime dressing.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 4 cups mixed salad greens
- 1 ripe mango, peeled and diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup roasted pepitas pumpkin seeds
- 1 lime, juiced
Instructions:
Set the grill or grill pan over medium-high heat to heat it up
Put chili powder, cumin, salt, pepper, and olive oil in a small bowl
Use the spice mix to coat the chicken breasts
Grill the chicken for six to eight minutes on each side, or until it's fully cooked
After letting it cool a bit, cut it up
Mix salad greens, chopped cilantro, diced avocado, sliced red onion, and roasted pepitas in a large bowl
Slice some chicken and put it in the salad
Pour lime juice over the salad and gently toss to mix
Serve right away
